- 8 lb pork shoulder or pork butt
- 1 tablespoon black pepper
- 2 teaspoons cayenne pepper
- 2 teaspoons white pepper
- 2 tablespoons ground cumin
- 4 tablespoons paprika
- 1 tablespoon dried oregano
- 3 tablespoons brown sugar
- 2 tablespoons coarse kosher salt
Directions:
- Make the rub by mixing all the spices together in a bowl. Set aside.
- Rinse meat under water and pat dry with paper towels.
- Stab meat with fork all over.
- Place meat into the Crock Pot with the fatty side at the top.
- While in the Crock Pot, rub ingredients vigorously into the meat until generously covered all over.
- Add ¼ water to the Crock Pot without rinsing the rub off the meat. Cook on low for 6-10 hours.
