Rock Your Resolutions Brunch: Cook It

Planning your menu for a New Years Resolutions brunch is a little tricky.  Most females will have a resolution around loosing weight or getting in better shape after the splurge of sweets through the holidays, so you will want to have delicious choices available so people do not break their resolutions the first day.  On the other hand,  your guests may want that one last sinful splurge before their resolutions begin.  My recommendation is to split your menu and serving table in half, with healthy options on one side and rich decadence on the other.

Since this is a brunch, on the healthy side you should offer an egg white quiche loaded with spinach and veggies, and fresh cut ripe fruit.  Citrus Fruit, cantelope, and berries are in season delicious.  On the splurge side, make sure you pick up some fresh doughnuts, bagels, and an egg dish loaded with bacon and sausage.  One item I will feature will be on the splurge side of the table with Bacon Cheddar Deviled eggs.  These are my favorite item to bring to a brunch.

Bacon Cheddar Deviled Eggs (Recipe makes 24 deviled eggs)

Ingredients:

  •  12 eggs
  •  1/2 cup mayonnaise
  •  ¼ cup bacon bits
  • 2 tablespoons finely shredded Cheddar cheese
  • 1 tablespoon mustard
  • 3 green onions sliced

 Directions:

  1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
  2. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, bacon bits, cheese, and mustard.  Stir in green onions. Fill egg white halves with the yolk mixture and refrigerate until serving.

I make this recipe a little healthier by using light mayonnaise.  I hope this gives you some great menu ideas for your Rock Your Resolutions Brunch!
