Christmas Cookies & Champs: Cook It

Hello Cuisinistas!  I don’t know if you are like me, but I limit the desserts I allow myself to eat throughout the year.  But when it comes to Christmas time, I allow myself to indulge in all of the yummy homemade desserts around! Then, I add “loosing those few pounds” onto my New Years Resolutions list.

My mother-in-law bakes 10 types of cookies every Christmas, so this month I am going to feature two of her most requested recipes.  All of the women seem to crave these seven layer cookies, and the men tend to love the clusters.

Seven Layer Cookies- Women’s Favorite

Ingredients:

  • 12 whole crushed graham crackers
  • ¼ lb butter
  • 1 cup coconut flakes
  • 6 oz butterscotch chips
  • 6 oz chocolate chips
  • 1 can sweetened condensed milk
  • 1 cup chopped walnuts

Directions:

Melt the butter in a 9×13 baking dish.  Layer gram crackers, coconut, butterscotch chips, and chocolate chips.  Dribble condensed milk evenly over the pan. Sprinkle nuts evenly over the top.  Bake at 350 degrees for 30 minutes.

Clusters- Mens Favorite

Ingredients:

  • 12oz bag of chocolate chips (2 cups)
  • 12oz can of cocktail peanuts (2 cups)
  • 5 oz can chow mein noodles

Directions:

Use a double boiler over medium heat to melt the chocolate chips.  Once the chocolate is completely melted add the peanuts and stir until evenly covered.  Add in the noodles and stir gently until blended being careful not to break all of the chow mein noodles.  Drop the mixture by rounded spoonfuls onto a wax paper lined cookie sheet.  Once they have hardened store them in the freezer until you want to eat one.
