Boo-tiful Babies Bash: Cook It

What food will we be serving these adorably costumed babies?  Some delicious home made baby food.  Since all of the babies attending our bash will be between 4-8 months, a delicious Roasted Pumpkin Puree will be on the menu.

When shopping, you will want to buy either a baking pumpkin or a sugar pumpkin.  These are smaller than the kind you carve and will be 5-8 lbs.  Slice the pumpkin down this middle- this will take some muscle.  Use a spoon to scrape out all of the seeds and inside strings, just like you would when carving a pumpkin.  Now place the pumpkin meat side down into a baking dish with 1 inch of water.  Heat your oven to 375 and bake for an hour.  When the pumpkin finishes baking use a spoon to scrape out the meat of the pumpkin and place it directly into your blender.  I have a Vitamix which works great for making baby food.  Add ¼ cup of the water you baked the pumpkin in and 1 tsp of pumpkin pie spice.  Now just blend on high until it is completely creamy.

I’ve tested this out with my little girl, and she loves the roasted pumpkin plain, as well as mixed with either apple or pear.  At the party, I will be putting out the roasted pumpkin puree, pureed apples, pureed pears, and some yogurt so moms can mix to their babies tastes.  I’ll also be packaging a cute pumpkin jar of food for each baby to take home, so it will double as one of my party favors.
