Are you thinking of serving dinner at your own pink party? If you are, here is a delicious salmon with lime butter recipe along with a sautéed spinach recipe that comes out very similar to the one served at the Sur Lounge.
Grilled Salmon with Lime Butter Sauce
Ingredients:
- 6 (6-oz) pieces salmon (about 1 inch thick)
- 1 1/2 teaspoons finely grated fresh lime zest
- Lime Butter
- 1 large garlic clove, chopped
- 1/4 cup fresh lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 stick (1/2 cup) unsalted butter, melted
Directions:
- Purée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend for 30 seconds until emulsified.
- Prepare your grill for cooking over medium high heat. If the weather does not permit you to BBQ, then you can pan fry the salmon in some coconut oil.
- Season salmon all over with salt and pepper, then grill on a lightly oiled grill rack for 4 minutes. Turn fillets over and grill until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.
Salmon is a delicious and healthy main dish, and I love to pair it with cooked spinach just like the SUR Lounge. Plus it makes a very easy side so you can enjoy more time with your guests.
Garlic Sauteed Spinach
Ingredients:
- 1 1/2 pounds baby spinach leaves
- 2 tablespoons good olive oil
- 6 cloves minced garlic
- 2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1 tablespoon of lime butter (from salmon recipe)
- Sea or kosher salt, optional
Directions:
- In a very large pot, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it’s browned.
- Add all the spinach, salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.
- Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted.
- Using a slotted spoon, lift the spinach to a serving bowl and top with the lime butter, and a sprinkling of sea or kosher salt.
