cheese plateEverything doesn’t always have to be so complicated. Sometimes you just want some simple-but-still-fab wine pairings. Here are some classic cheesy selections (and one chocolate one too) that your guests are sure to “savor” at twilight hour.

  1. Vampire Merlot and Parmesan: This merlot is smooth and medium-bodied with a fresh, black cherry aroma, and hints of herbal spices. Aged in oak, it has graceful fruit flavors and subtle shadings of vanilla and toast from the oak, perfectly complementing the essence of aged parmesan.
  2. Vampire Cabernet Sauvignon and Fine Belgium Dark Chocolate: Full-bodied with Blackberry and Dark Cherry aromas, with just the right amount of Oak flavors leading to a lingering finish, pairing well with the richness of fine dark chocolate.
  3. Dracula Syrah and Sharp Cheddar Cheese: Black Cherry and Dark Chocolate flavors launch this varietal into an intense, dark, rich, and flavorful wine, an ideal balance for sharp cheddar cheese.
  4. Chateau du Vampire Midnight Rendevous and Roquefort: This skillful blending of Syrah (50%) with Counoise (17%), Mourvedre (17%) and Grenache (16%) results in a bouquet of Dried Berries and Cocoa, and decadent flavors of Black Cherry, Dark Chocolate, Spicy Fig and Plum. The sweet wine has an intense flavor that is not overpowered by the Roquefort cheese.

Enjoy! Till next time…
