Trendy Tacos, Tasty Bikinis: Cook It

What a better way to celebrate Cinco De Mayo than with some delicious Mexican food, an icy Margarita, and the opportunity to shop for some hot bikini’s with your friends.  On the menu will be a delicious guacamole salad, guac and chips, and a taco bar (that you will most likely top with some guacamole).  Guacamole is my favorite thing about Mexican food, so I’ll give you some tips on how to make some killer guacamole.

First and foremost, it has to start with a good avocado that is ripe.  When shopping for avocados you want to make sure it is ripe.  To test if an avocado is ripe, it should give a little bit when you push it with your finger.  If the avocado is hard to touch and does not give at all you will need to ripen it at home.  Put them on your counter in a paper bag and check them each morning.  As soon as they give when you push on them with your finger then put them in your refrigerator.  They will stay at the perfect ripeness for a week.  If an avocados skin budges just by picking it up then it is too ripe and will most likely be stringy.  Leave those at the store.

I prefer a very simple guacamole that really brings out the flavor of the avocado.  I mix one spoonful of my favorite salsa per avocado, then stir in a pinch of kosher salt.  I mash it with a fork to not make it too creamy- and that is it.  Simple, but absolutely delicious.
