salmonAre you thinking of serving dinner at your own pink party?  If you are, here is a delicious salmon with lime butter recipe along with a sautéed spinach recipe that comes out very similar to the one served at the Sur Lounge.

Grilled Salmon with Lime Butter Sauce

Ingredients:

  • 6 (6-oz) pieces salmon (about 1 inch thick)
  • 1 1/2 teaspoons finely grated fresh lime zest
  • Lime Butter
  • 1 large garlic clove, chopped
  • 1/4 cup fresh lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 stick (1/2 cup) unsalted butter, melted

Directions:

  1. Purée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend for 30 seconds until emulsified.
  2. Prepare your grill for cooking over medium high heat.  If the weather does not permit you to BBQ, then you can pan fry the salmon in some coconut oil.
  3. Season salmon all over with salt and pepper, then grill on a lightly oiled grill rack for 4 minutes. Turn fillets over and grill until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

Salmon is a delicious and healthy main dish, and I love to pair it with cooked spinach just like the SUR Lounge.  Plus it makes a very easy side so you can enjoy more time with your guests.

Garlic Sauteed Spinach

Ingredients:

  • 1 1/2 pounds baby spinach leaves
  • 2 tablespoons good olive oil
  • 6 cloves minced garlic
  • 2 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 tablespoon of lime butter (from salmon recipe)
  • Sea or kosher salt, optional

Directions:

  1. In a very large pot, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it’s browned.
  2. Add all the spinach, salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.
  3. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted.
  4. Using a slotted spoon, lift the spinach to a serving bowl and top with the lime butter, and a sprinkling of sea or kosher salt.
