Lights, Camera, Oscar Party: Cook It

Since this is a party for the stars, the presentation of your food will be almost as important as the taste.  There are many fun ways to carry this theme through your food spread.  Since the Oscars will fall over dinner time you will want to plan accordingly so your guests will have enough to nibble on.  For occasions like this where I want to offer a full meal to my guests but don’t want to spend the entire party in the kitchen, I always look to my crock pot.  I know what you are thinking…crock pots normally make comfort foods like chili and pot roast, not something fitting for our glamorous Oscar party.  We went with this fantastic group dinner recipe and added a few minor tweaks of our own to be a true Cuisinista:

Slow Cooker Chicken in Creamy Sun-Dried Tomato Sauce

What You’ll Need:

  • 2 cans (10 3/4 ounces each) Campbell’s® Condensed Cream Chicken Soup
  • 1 cup Chablis or other dry white wine
  • 1/4 cup coarsely chopped pitted kalamata olives
  • 2 tablespoons drained capers
  • 2 cloves garlic, minced
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 3/4 cup jarred sun-dried tomatoes, drained and coarsely chopped
  • 10 skinless, boneless chicken tenders (about 2 pounds)
  • 1/2 cup chopped fresh basil leaves

How to Make It:

  1. Stir the soup, wine, olives, capers, garlic, artichokes and tomatoes in a 3 1/2-quart slow cooker. Add the chicken and turn to coat.
  2. Cover and cook on LOW for 3 to 4 hours or until the chicken is cooked through. Sprinkle with the basil.

This is a delicious dinner to come out of your crock pot for your guests, and you can do all of the work before they arrive.  Offer some wild rice or Quinoa on the side.

Think about putting a glamorous twist on your traditional appetizers as well.  Instead of the traditional hummus dip with pita chips, toast some whole wheat bread and use star cookie cutters to cut out stars of bread.  Put a nice spoonful of hummus in the middle of the star and sprinkle with sesame seeds and green onions, and you have a fabulous looking appetizer.
