- 1.5 cups almond flour
- 1.5 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup Earth Balance Non Soy butter
- 1 tsp shaved coconut (optional)
- 1/2 cup organic molasses
- 1 cup truvia bakers blend
- 1 Organic Egg
- 1 tsp Vanilla Extract
- 3 cups Old fashioned Oats (Quaker)
- 3/4 Cup Raisins or Dried Cranberries
- 1/2 cup sugar free/dairy free choc chips
- 1/2 cup crushed pecans (optional)
Directions:
- Preheat Oven to 375
- Mix almond flour, spices, baking soda, and salt with electric mixer
- In a separate bowl, mix *butter, sugar, molasses, until fluffy
- Add egg and vanilla to butter/sugar mix
- Add your flour and beat until mixed
- Using a wooden spoon, mix in your oats, raisins/cranberries, choc chips, and pecans
- Put in a small baking pan and flatten
- Cook 12-15 minutes and place in refrigerator
- Keep refrigerated to aid in consistency
