JP’s Low Guilt Cookie Brownies

Picture 65Ingredients:

  • 1.5 cups almond flour
  • 1.5 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup Earth Balance Non Soy butter
  • 1 tsp shaved coconut (optional)
  • 1/2 cup organic molasses
  • 1 cup truvia bakers blend
  • 1 Organic Egg
  • 1 tsp Vanilla Extract
  • 3 cups Old fashioned Oats (Quaker)
  • 3/4 Cup Raisins or Dried Cranberries
  • 1/2 cup sugar free/dairy free choc chips
  • 1/2 cup crushed pecans (optional)

Directions:

  1. Preheat Oven to 375
  2. Mix almond flour, spices, baking soda, and salt with electric mixer
  3. In a separate bowl, mix *butter, sugar, molasses, until fluffy
  4. Add egg and vanilla to butter/sugar mix
  5. Add your flour and beat until mixed
  6. Using a wooden spoon, mix in your oats, raisins/cranberries, choc chips, and pecans
  7. Put in a small baking pan and flatten
  8. Cook 12-15 minutes and place in refrigerator
  9. Keep refrigerated to aid in consistency
