Jam It Up for 2014!

Happy New Year Cuisinistas! Hope your holidays were magical and relaxing. The thing I always love about January is having a chance to start fresh and get inspired for the new year to come. This year, after much debate, I have decided that my new years resolution is to start cooking more fresh meals and snacks, in hopes to lower the amount of processed foods at home. We’re expecting a new baby boy in June so the healthier the better for all of us!

First up on the list is to to make my own Strawberry-Vanilla Bean Jam, from Valerie Gordon of Valerie Confections’ new cookbook SWEET (Click to Enter to Win “A Sweet Cuisinista Giveaway” and to learn more!). Her Strawberry-Vanilla Bean Jam is a best-seller (see above pic). She says “the vanilla bean rounds out the sweetness of the strawberry and takes the jam to an almost candy-like level.” Ummm yes please!!!! This would liven up any piece of whole grain toast, right? Or english muffin, homemade scones, or pretty much anything!

BTW- Wouldn’t this make a great party favor for a brunch get-together? Adorable!

I can’t spill the recipe but here are the ingredients…just 3 simple ingredients for this one – love it! I mean anyone can do this.

  • 6 pints strawberries, rinsed, hulled and quartered
  • 3 cups sugar, or more to taste
  • 1 to 2 vanilla beans, split

Here’s your shopping list:

  • 6 12 oz Mason jars (I saw some at Paper Source, I bet Michaels would have them)
  • 6 pints strawberries
  • 3 cups sugar
  • 2 vanilla beans
  • cute wrapping: tissue, pipe cleaners, ribbon, labels (See these homemade bubbles jars for inspiration)
