Food, Fans, & Football: Cook It

photo 2My husband loves football, tailgating, and barbequing, so the full credit for this marinade goes to him. He switches up what he barbeques at each tailgate, but at the recent Memphis vs. UCLA game he made these delicious carne asada tacos that everyone raved about. The secret is in the marinade, and he normally marinades the skirt steak for 24 hours.

Marinade Ingredients:

  • 2 TBLS Orange Juice
  • 2 ½ TBLS Lemon Juice
  • 2 ½ TBLS Lime Juice
  • 1 Clove Garlic Minced
  • 2 ½ TBLS Soy Sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ tsp dried oregano
  • 1 tsp black pepper
  • ½ bunch fresh cilantro
  • 4 TBLS Olive Oil
  • 1 tsp red pepper
  • 2 pounds skirt steak

Taco Bar Items:

  • Cotija Cheese (grated)
  • Salsa
  • Guacamole
  • Sour Cream

Combine all ingredients for the marinade and place inside a ziplock bag with the meat for 24 hours. If you would like to use this marinade with chicken then you should butterfly boneless skinless chicken breasts, and you can marinade the chicken for up to two days. Barbeque the meat on a hot grill for a few minutes on each side, then slice and serve!

We serve the sliced meat in a self-service taco bar grilled tortilla’s, Mexican cheese, salsa, guacamole, and sour cream. This certainly leaves everyone happy that they tailgated with you!
